  • 200g: soft butter at room temperature
  • 150g: sugar
  • 4 eggs at room temperature
  • 325g: Wheat flour (type 405)
  • 1 tbsp: Cocoa powder
  • 1/2 level tsp baking powder
  • salt
  • 200ml: Whole milk
  • 80g: Dark chocolate (70% cocoa content)
  • soft butter for the waffle iron
  • Icing sugar for dusting


  • Weigh all ingredients exactly in small bowls separately and have them ready. Put the butter with the sugar in a large mixing bowl and stir with the whisk of the hand mixer in approx. 5 min. To a white-creamy mass. Stir in the eggs one at a time. Mix in each egg completely before adding the next. Then stir for another 5 minutes until a foamy mixture has formed.
  • Mix the flour with cocoa powder and baking powder and sieve onto the butter and egg cream. Quickly stir in the flour mixture with the spatula or whisk. Now add a pinch of salt and the milk and stir in with the spatula, so that a smooth dough is formed. Finely grate the chocolate with a micro grater and stir into the batter. Cover the mixing bowl with a plate and let the dough rest at room temperature for about 10 minutes.
  • Preheat the waffle iron to medium heat. When the baking temperature is reached, brush the baking surfaces with a little soft butter. Place about 3 tablespoons of batter in the middle of the lower baking surface and close the waffle iron without applying pressure. Bake the waffle for about 3 minutes until golden. Place on a wire rack so that the waffle can cool down a little. Bake more waffles until the batter is completely used up.
  • Dust the still warm waffles with powdered sugar and serve immediately.
